Why I chose this career: I made the decision very early on in my life that bartending and the bar industry as a whole was my playground and I wasn’t leaving it to go to university. Bartending has since become my life. It’s in my blood and I can’t wait to see what the future brings.

Biography: I started working as a barback when I was 15 to earn some pocket money in a place called the Hunting Lodge. Later I worked in night clubs but eventually had enough of that scene. It was during this time that Sean Muldoon called me and offered me the job at the Merchant. I still didn’t feel ready for it. Later he offered me the job one final time before he looked for someone else. I took it and started in the hotel. I had just turned 18. I never looked back. I loved being an integral part of the Merchant operation. When Sean set off to find a site for the Dead Rabbit in New York, it was agreed that I would move to London for a time and work in Milk & Honey London, which was one of the most award-winning bars on the planet, only beaten by the Merchant. Every job to date has shaped my passion for cocktails and for bartending.
