Smile and say ‘Cheese’ — Irish cheese

When the Irish say "cheese" these days, they really do have something to smile about. It seems that the Celtic Tiger has wagged its economic tail in more directions than the Irish can shake a stick at, including the food industry, where some fine old staples, especially cheese, are taking on a new life.
